It is called the "humba." I'm sure our German friend Raul can shed more light on this. What I've read about the humba is that after a game, the players go acknowledge the support of the home crowd. The crowd determines their man of the match who is then invited up in the stands to lead in the singing. Raul of Schalke 04 was given this honor after their second leg victory against Inter Milan in the QF of the Champions League. Those videos of Schrock engaging in the humba means he was judged by the supporters to be the man of the match. You could see how important a player he is for his club based on that.
